Cucumber Cups


This is an hor dourve recipe that I make every year for Christmas Eve at Mother-in-law's house. Simple and refreshing.


2 large cucumbers

1/4 cup cooked lobster or crab (imitation works too)

1/4 cup celery, finely chopped

1 tsp fresh lime zest

1/4 tsp lime juice

3 tsp green onion, thinly sliced

1&1/2 tbsp olive oil

Salt / Pepper to taste

Celery or 1 inch skinny sliced of green onion for garnish


Cut cucumbers crosswise into 1 inch pieces. Cut a small amount of the peeling off 4 sides. Scoop out the pulp, leaving a small amount to make a cup. Lightly salt them and turn them upside down onto a paper towel to draw out some of the moisture.

Meanwhile, make the filling:

Combine the rest of the ingredients. Fill each cup, garnish and serve.
